What will happen on May 15?
The new policy will be effective from 15 May 2021 to all the users who have already accepted the new policy. But for the users who have not accepted WhatsApp’s new policy yet, they’ll be shown a reminder to accept the new policy. After few weeks, users will not be able to access these limited functionalities also, and as reported by WhatsApp, it deletes inactive accounts after 120 days.

As of now you can not change your decision once you have accepted the Terms of Services and Privacy Policy.
